Yeast propagation
General Information The development of the Yeast Propagation system is closely related to the developments and the wishes of the market and its consumers. Resulting in a system that meets all the high hygienic brewery standards in performing a progressive and accepted technology. Product Description Yeast is propagated using two cylindrical conical propagation tanks.The smaller propagation tank is equipped with a glycol operated cooling jacket designed to remove fermentation heat during the first step of the propagation.The larger propagation tank is equipped with a steam operated heating jacket to sterilise in one batch all the wort that is used during the first two steps of the propagation. At start of propagation either cold or hot wort is filled into this tank. The sterile wort is cooled using an external heat exchanger. This heat exchanger is also used to remove fermentation heat during propagation. After sterilisation of the wort in the larger propagation tank, part of the sterile wort is transferred to the larger propagation tank where yeast is added from a Carlsberg flask to start the propagation. The propagated yeast is transferred to the larger propagation tank where the second and third step of the yeast propagation are performed. During propagation the wort is aerated while being circulated. The system is completed with a sanitary piping system including CIP fittings and piping, designed in such a way that dead zones are not present. Optimum product and CIP routing is assured before, during and after the propagation process. Instruments and automation components are provided for automatic control of the process and trending & monitoring of all relevant process parameters. |
